We bring you this healthy and tasty recipe suggestion as we continue in the effort to legalise the stevia plant for culinary use. Naturally sweetened with stevia, this carrot cake is particularly suitable for people with problems of diabetes, high cholesterol, high blood pressure, obesity, tryglycerides, excess acid, etc.

1 cup grated carrot
200 ml extra virgin olive oil
4 eggs
240 g spelt flour
8 g (1 teaspoon) baking powder or bicarbonate of soda
2 g (half teaspoon) ground dried stevia leaf
1 teaspoon poppy seeds
2 dessertspoons chopped almonds

We recommend using organic ingredients. (For vegan recipes, substitute the eggs with coconut milk or oat milk).

Method: Preheat the oven to 180ºC and lightly grease a cake tin with a little oil. Mix the dry ingredients. Beat the eggs in a separate bowl, add the oil, carrot, stevia, then add the flour. Stir the mixture well and place in the cake tin. Sprinkle the poppy seeds and chopped almonds on top, and bake for around 35 minutes.
